I tried the $500 off coupon on a small purchase knowing it wouldn't work to see what would happen. It says "This redemption code can't be used for this purchase." Does that mean it will work for me if I buy a $500 item?

I don't think it will work as it should be acceptable for any purchase amount (any extra savings will be lost).
From what I know about this coupon, it can be given by a specific person intentionally by eBay or PayPal. But I may be wrong as I can't confirm it (it did not work on my account, but I've heard that it worked for some).

There is nothing to link to your e-mail addresses.
Those coupons either work or don't work, nothing in the middle.
If it was assigned to your PP account, you are lucky. If not, then it's not your day (you get your luck at some other place anyway ;) ).
For example, none of the coupons worked for my PP account, but my friend was able to use one.
Just try each to find out.
